CULINARY PRACTICES IN THE COUNTRY OF NIÇOIS, FROM THE SEA TO THE MOUNTAINS

The cuisine provides a bound, like the Niçoise language (Nissart), between all social strata. In all sociological profiles, everyone willingly finds their “roots” around a stew of ravioli and the inhabitants who have a vegetable garden grow the vegetables associated with these culinary practices: basil, tomato variety Saint-Pierre, zucchini de Nice (“trumpet” variety), cebette (young onion), round zucchini for small stuffed vegetables, aubergines for ratatouille or “pink coconut” beans for pistou soup.

Nice is well-known for its lifestyle, for being a eco-friendly modern town. However, we are very traditional regarding our local food. The culinary art is ancient and Mediterranean, with many vegetables, flavours and aromas… The “Cuisine Nissarde” label is awarded to restaurants that employment to market Nice’ cuisine by endeavor to follow the recipes, use quality merchandise and of course respecting the health and safety regulations. We have over 245 tapas and dishes that you won’t find anywhere else in the world so go discover our delicious flavours. Below you will find some restaurants I really like.
